Cherry Tomato Sourdough Crostata

Dough Topping
  • Flour 250g
  • Salt 4g
  • Starter(or discard) 119g
  • Butter 227g
  • Icy water
  • Olive oil
  • Balsamic reduction
  • Sautéed tomatoes with garlic and onion
  • Sour cream
  • Basil


  1. Mix 250g flour and 4g salt.
  2. Add 119g starter (can be active or discard) and mix till evenly dispersed.
  3. Cut the butter.
  4. Drizzle icy water over the mixture until it comes together.
  5. Wrap the dough up in a disc-like shape for approximately 30 mins.
  6. Have your dough all ready rolled out and pour on top.
  7. Drizzle sourdough on top as well as brushed the crust, then swirled a little balsamic reduction on top.
  8. Sprinkle with salt.
  9. Bake at 375°F for approximately 30 mins until the crust is golden.
  10. Wear LANON heat-resistant liquid silicone gloves to take out the crostata from the oven.
  11. Place basil, burrata, and more olive oil and balsamic reduction on the top.
