Who does not like pizza just out of the oven? This delicious pan pizza is stuffed with white soft cheese and topped with sweet onions. This stunning recipe is from Klola (IG@sourdough_proven). Easy peasy!
300g Pizza flour
204g Water (68%)
45g Sourdough levain
10g Extra virgin olive oil
Two cups of white melting cheese like mozzarella, brie, oaxaca or burrata, pesto, and tomatoes pesto
One (or more) sliced big sweet onion, sprinkle with dry thyme, and parmesan. Salt flakes before serving.
Combine all ingredients but salt, rest 30 mins, and add salt.
Knead until a homogeneous dough is formed.
Klola did 2 set stretches and folded 40 mins apart. Total Bulk 4 hours.
Cold retard 48 hours.
Take the dough out of the fridge, divide it into two balls, rub with olive oil, and cover.
Let it rest until puffy (around two hours).
Grease the pan(10-inch cast iron pan) with olive oil, dump one ball, and stretch it out covering all the bottom.
Add the filling. Stretch out the other ball and put it on top covering all the filling.
Add the sliced onions on top, and add herbs and olive oil.
Bake at 450°F for 20/25 mins.
